Why do the traffic results differ in Google Analytics compared to my Web hosts Cpanel traffic results?
GA has to have the code on each page where your cpanel will track every page on your site. At least that what I think.

Infoesource is partly right. Analytics needs the code to be on every page for it to track the stats. Usually, in footer.php before the last body tag is a good place. Your cpanel stats is tracking everything.
Google for example, can't track how many times you access your wordpress admin area but your cpanel stats will.

Google Analytics is a great tool, but all Web servers, keeps records of full access. Additional page tracking is not necessary and unnecessary overhead on the time of page load. The reason that could delay the loading of a page, it is because you have to load the script of Google first, then the rest of the content. If you have Javascript disabled, you may also have inaccurate statistics, even the most popular addons in Firefox or Opera filters that block ads, block Google Analytics service, so you might miss some visitors back .

I like cpanel stats myself as they are nice and robust generally - so it's not a surprise I like them! And I believe they should be spot on - as it's attached to the host.
