How do I tackle this?

I have been approached by my local wine handler to help him with his website I have put the project on ice before I know how to tackle the problem.

Here are the facts he already has a website with which he is selling twice as much wine online as he is in his shop in town.
He has kept his website secret from his shop business because in his own words some bottles are cheaper online than in his shop.
He spends 2000 Euro per month buying traffic for his online shop and wants to replace some/all of it with organic traffic.
He does have a seperate website for his town shop its not very good but as he says its a presence.
I have so far only managed to talk to him but not the decision maker his wife.

I have said to him at some point in time his "secret" website will be seen and then questions will be asked.

I would like to get his "secret" website up onto page one of Google here in Germany and take a fee for doing so.

I would welcome any ideas on how to go about this.

I am already starting another website for a business person from scratch which I find far more easy to do as I have total control and have found the keywords myself and the URL is the main keyword,and have made a video with animoto which the owner likes.

I have been doing a lot of brick and mortar local business promotion, and one thing I have found is that it is much easier to get a lot of business 'citations' (Google Places, Bing and Yahoo's equivalent, Merchant Circle, etc.) listed on the first page of the SERPs than it is to get a page to the very top. The citations also validate the business web site (as long as all the business details agree and point to the web site) making it rank even higher.

Videos are also insanely good at getting ranked and drawing attention to your custom in the SERPs. They are cheap to produce, and every Animoto is unique.
